The availability of baking apples will vary according to where you live and the time of year. You should be able to find Golden Delicious and Rome apples in the supermarket at any time of the year. While these are good standby apples, be on the lookout for more flavorful apples, such as Baldwins, Cortlands, Empires, Galas, Macouns, Northern Spys, Reinettes du Canada, and Rhode Island Greenings. I always prefer to buy one of these “heirloom” varieties when I can find them, usually in the fall.
