Keeping Tart Shells from Getting too Brown

Sometimes when you bake a tart shell, especially if baking it twice, the outer rim may get too brown before the tart has finished baking. If this starts to happen, cover the outer rim of the tart with a strip of aluminum foil to protect it from the heat of the oven.
