No, really. I keep a Bombay Bad Boy in the back of my cupboard for truly blue days, then just jazz it up with a tablespoon of peanut butter and a fistful of small diced frozen veg. It’s filling, punchy, and if you pack it with veggies, it’s almost good for you.
And on that note, you could do worse than keeping some instant soup sachets to hand to make quick pasta sauces with (I like the Ainsley Harriott Szechuan pepper one over noodles with frozen veg, personally), and a few varieties of microwavable rice. Because if you’re bothering to cook yourself a main meal from scratch, you deserve to cheat on your rice. I almost always do, and I cook for a living, so you can too.
