The general rules given above are the results of experiments made by Dr. William Kitchiner assisted by his own cook, Mrs. Elizabeth Lister, and Mr. Henry Osborne, cook to Sir Joseph Banks, President of the Royal Society; they apply also to ‘roasting’ in a gas oven in which the joint can be hung, or cooked in an uncovered tin.
