‘The manufacture of comfits embraces various very complicated processes. It forms in itself a special branch of confectionery, and this is so true that there exist in this country, and also on the Continent, not only distinct establishments, but even particular towns where comfits are manufactured wholesale. For instance I will name Bristol in England and Verdun in France.’

    Utensils Required

  1. An untinned copper comfit pan: it should have a handle over the top and one in front of the pan.
  2. A chafing dish or portable gas stove to place underneath.
  3. A beading funnel with a pointed wooden stick adapted to stop the upper hole of the funnel (this is called a spigot).
  4. This funnel is used to pearl comfits, or in other words to coat kernels, aromatic seeds or certain whole spices of which comfits are usually made.
