‘The writer has read with much interest the notice of this cheese by Miss White, which appeared in to-day’s issue of the Observer.’

‘Born in the county of Leicester 80 years since, he has “eaten” Stilton more or less, all his life.

‘He well knows the names mentioned by Miss White — Quenby Hall and Village, Little Dalby, Wymond House, all in the centre of the famous “Quorn” country, and has known many farms which in years gone by made glorious Stiltons, and has seen the great open Market Place of the County City of Leicester at the annual Cheese Fair in September in years gone by, and now never to return, filled with “stacks” of Stilton and the famous yellow Leicestershire cheese with their makers prepared to sell them.
