Le Chou-Fleur

The cauliflower is regarded as a winter vegetable but already by October the most enormous white heads are to be seen n vegetable crates on market day, imported from further north. They make a good start, together with the equally large heads of celery and the football-sized cabbages, to the winter cuisine.
