Many recipes in this book call for lemon, lime, or orange juice. You should always squeeze it fresh—the flavor is far superior to bottled. The zest is the oil-rich outer skin of a citrus fruit. The easiest way to remove it from the fruit is to use a vegetable peeler. Take only the outer rind, not the bitter white pith beneath it.
