The game hen is about the most perfect bird ever to grace a barbecue. It’s leaner than a full-grown chicken but still fatty enough to give you gorgeous, crackling crisp skin, and it cooks fast—in maybe 40 minutes. You can grill a game hen using any of the methods included in this book for chicken, but my favorite way is on the rotisserie. The slow, gentle rotation crisps the skin and internally bastes the meat. The game hens come off the grill tender enough to pull apart with your fingers.
