Spiny lobsters (a.k.a. Florida lobsters, rock lobsters, or langoustes) look vaguely like Maine lobsters but have spotted, brown to tan bodies covered with formidable spines. They have no claws, and their tails are wider than those of Maine lobsters and are filled with firm, sweet, snowy white meat. The flavor lies somewhere between Maine lobster and shrimp, with a hint of scallop and monkfish. Usually only the tail portion is sold—a definite attraction for people who don’t like handling whole live Maine lobsters. You simply split the tail and grill the lobster meat in the shell—it’s one of the easiest shellfish to cook on the grill.
