When it comes to cooking clams and mussels, the last place you probably think of is your grill. Not so barbecue buffs in Bordeaux, who have devised one of the world’s most ingenious methods for cooking shellfish. They arrange mussels in a metal pan, pile dried pine needles on top, and set the whole thing on fire. Even if you don’t have pine needles, you can cook both mussels and clams on the grill with delicious results. You’ll never think of bivalves quite the same way again.
