METHOD: Indirect grilling
Baked apples and pears are two of the most satisfying and comforting desserts. This led me to wonder how they would taste smoke roasted. The answer is terrific. The subtle smoke flavor counterpoints the earthy sweetness of the fruit. Then there’s the theatrical value of lifting the lid to expose a gorgeous dessert on the grill. For a touch of drama, I usually roast pears instead of apples. I think you’ll find the combination of pear, butter, brown sugar, and wood smoke to be irresistible. And I wouldn’t say no to a side of vanilla ice cream, either!
