  1. Toast the spices in a skillet until they are fragrant. Here I’m making the Chinese Five-Spice Rub.

  2. Pulverize the spices in a mortar with a pestle or grind them in a spice mill. If you haven’t got a spice mill, you can use a coffee grinder. Once you’ve mixed in any additional ingredients, store the rub in an airtight jar away from heat or light.
