APPLE, OAK, AND MESQUITE CHUNKS are great for both grilling and smoking. To use chunks as fuel, light them in a chimney starter as you would charcoal. For smoking, soak them in water for 1 hour, drain, and toss on the coals, or if using a gas grill, place them in the smoker box or in a smoker pouch. You can also use hardwood logs for fuel. Oak, hickory, and mesquite are the most popular.
