jaggery, java sugar, coconut sugar Golden and grainy, this sugar is made by boiling down the sap of various palm trees. The sugar adds a maple syrup–like sweetness to stews and desserts. It is often formed into firm cakes. Store airtight at room temperature. Use brown sugar as a substitute.
