Chinese barbecue sauce This potent oily paste is made from ground dried brill fish, chile, garlic, dried shrimp, peanuts, coconut, and spices. Use the paste to season stir-fries, brush on meat before grilling, or use as a dipping sauce for hotpot or as a soup base. It contributes an aromatic seafood flavor. The one made in Taiwan is simply labeled barbecue sauce in English. Do not confuse it with another Chinese barbecue sauce from Hong Kong with hoisin sauce as a base. Check the ingredients list to see if it has the dried brill fish. Refrigerate after opening.
