preserved radish, salted turnip, preserved turnip The Asian white radish is preserved in salt, sugar, and sometimes soy sauce to transform it into a chewy, golden- to tan-colored cured vegetable. It is similar to sweet radish, but may be saltier and drier. Soak in water to remove excess salt. Use it to add a chewy texture and salty-sweet flavor to eggs, meats, rice soups, and dumpling fillings. Refrigerate or store airtight in a cool, dry place. See also sweet radish
