Buying Look for firm, smooth beets with fresh-looking tops; small, young beets are more tender and will cook faster than mature beets.

Storing Cut off the green tops to within 1 inch (2.5 cm) of the root, and refrigerate in a plastic bag for up to 2 weeks.

Quick tip Some stores carry precooked, packaged beets. You can also cook beets in advance and store them in an airtight container in the refrigerator for up to 3 days.

Using Add cooked, sliced beets to salads, or thinly slice raw golden beets and serve with a dip.
