Buying Choose firm orange-fleshed sweet potatoes (often labeled as yams) that are free of cracks, bruises, or soft spots.

Storing Store in a cool, dry place for up to 2 weeks; do not refrigerate.

Quick tip If you’re short on time, remember that sliced or cubed sweet potatoes will cook much faster than whole ones.
