The chump is cut from the rump at the end of the saddle, so it is positioned between the loin and the leg. It has a great flavour and some butchers are now selling whole chumps as a small roasting joint to serve two. Chump chops won’t be quite as tender as cutlets or Barnsley chops, but they will certainly taste very good.
