This can be cut from any part of the saddle and ■ - like a lamb chop - it will sometimes include the under fillet, depending on which particular part of the saddle it is cut from. A loin chop will be more economical than a cutlet, though again you may have difficulty in persuading your butcher to offer venison loin chops.
