A flavored butter is one of the most delicious ways to finish nicely grilled, pan-roasted, or broiled fish or shellfish. The Hog Island Oyster Bars have an ever-changing group of these for their baked oysters. Simply place slices of the compound butter on top of the hot food to melt as you bring it to the table. Shape the butter by spooning the mixture onto a square of plastic wrap, folding the wrap over, and forming the butter into a sausage shape about 1½ inches (4 cm) in diameter. Twist the ends of the plastic wrap closed and refrigerate until firm. Store the butter in the refrigerator for up to 2 weeks and frozen up to 6 months (although once you know that they are there and start using them, they won’t last that long!)
