Lightly toasting spices brings out their flavor. Add whole or ground spices to a small dry skillet over low heat and cook, stirring continuously, just until fragrant. Immediately transfer to a plate to cool. Use a mortar and pestle or a spice grinder to grind the spices if required by the recipe. The toasted spices are best used the same day.
