Breadcrumbs can be of many sizes depending on what you desire. I like using a rotary hand grater, but you could also place dried bread in a zip-top plastic bag and crush it with a rolling pin. To toast them, spread the bread crumbs on a baking sheet and bake in a 350° (175°C) oven for 8 to 10 minutes, or until they are lightly browned. Stir once or twice. Store in an airtight container in a cool, dry spot.
