Segmenting Citrus Fruit

Cut the ends off the citrus fruit. Stand the fruit on one end and, with a small sharp knife, remove all the peel and white pith by slicing from top to bottom all the way around the fruit, following the contour of the fruit. Cut between the segments on each side of the membrane to release the segments. Squeeze the membranes over a small bowl to reserve the juice.
