The European flat oyster is native and wild along the west coast of Europe, traditionally ranging from Norway to Morocco. Identified by their flat, as opposed to cupped, shape, these were once the most common oyster in Europe, but Pacific oysters have made big inroads there. Interestingly, European flat oysters are also available in New England and California. Small populations have established off the coast of Maine, and they are farmed in small numbers by Hog Island in Tomales Bay. European flats have a meaty texture and a delicious taste of seaweed and minerals.
