These are clams with long brittle shells resembling a straight razor. They have short siphons but a powerful digging foot that allows them to escape predators by rapid burrowing. The two most common razor clams on the market are both in the Pharidae family: the Pacific razor clam (Siliqua patula) and the Atlantic jackknife clam (Ensis leei). Both are tender and sweet and can be eaten raw or cooked.
