Two types of lobsters are commercially available in the United States: clawed and spiny. Both the American and European lobsters have been farmed but not very successfully because they are cannibalistic. What we see in the market are harvested from the wild. As wild stocks have dwindled, farmed has become more important. Climate change is altering the habitat for lobsters, which accounts for their increasing price. When harvested, lobsters have their claws “banded,” which makes them both easier to handle and curbs their aggressive behavior. If banded too long, the claw meat will begin to deteriorate.
