Crayfish typically live in muddy water and need to be thoroughly cleaned before cooking. Start by washing them repeatedly in clean water. Once the water runs clear, add a couple of handfuls of salt into a basin of water and let them sit for 10 minutes. Soaking longer in salted water will kill them. Drain and rinse them off with fresh water. If the water is still murky, rinse again until it becomes clear.
