Chinook salmon (Oncorhynchus tshawytscha), also known as king salmon, is considered by many to be the best-tasting of all salmon. They have a high fat content and a correspondingly rich flesh that ranges from white to a deep red color. The red color comes from the pigment found in the crustaceans that the fish eat, mostly shrimp and krill. White king salmon are genetically unable to process this pigment but are coveted in the market as being more delectable.
