All commercially available wild salmon is found on the West Coast. The Pacific Ocean is home to six types of salmon, and U.S. and Canadian boats harvest five of them: chinook, coho, pink, sockeye, and chum. To confuse matters, each of these has at least one other name as well as their Latin name. They are listed here by the names you’ll most likely see at markets.

Chinook salmon (Oncorhynchus tshawytscha), also known as king salmon, is considered by many to be the best-tasting of all salmon. They have a high fat content and a correspondingly rich flesh that ranges from white to a deep red color. The red color comes from the pigment found in the crustaceans that the fish eat, mostly shrimp and krill. White king salmon are genetically unable to process this pigment but are coveted in the market as being more delectable.
