Crudo is the Italian and Spanish word for “raw,” and it refers to a dish of raw protein, usually fish or shellfish, usually coated with olive oil or a citrus-based sauce. Here are some similar variations of this dish:

Carpaccio: Raw fish or meat, thinly sliced or pounded super thin. Thinly sliced vegetables also are also served as carpaccio.

Tartare: Raw meat or seafood that’s minced or finely diced and bound with some sort of sauce, dressing, and/or other seasonings.

Sashimi: A Japanese dish of raw fish that usually isn’t marinated or sauced.
