These small flounders generally weigh in at less than a pound (455 g) and measure just 6 to 8 inches (15 to 20 cm). Their natural territory stretches from the tip of Baja California to the Bering Sea, but sand dabs are considered a San Francisco delicacy, regularly found in restaurants.
Related to other popular flatfish—including Dover, English, petrale, and rex sole, it is the smallest of them all. Sand dabs have a moist, tender texture and a sweet, mild taste.
