Shrimp dishes are an important feature in the Chinese cuisine, and they are always prepared from their raw state, just as meat and fish dishes are. Shrimp that are already boiled are not suitable for Chinese cooking. Fortunately, frozen raw shrimp are available in Chinese and Oriental stores as well as at most supermarkets, and I would strongly advise trying to get them.
