Catalans regard the sardine as the best fish to come out of the Mediterranean in spring and most particularly in the second half of April, which is also the season of new peas. But, of the so-called blue fish, all distinctly oily, the mackerel, though less esteemed, is the most nutritious and is at its best in June and July.
