Leeks found in China are large and cylindrical and resemble a giant spring onion with a white garlic-like husk. Leeks found in the West are a good substitute with their mild, slightly sweet, onion flavour. To prepare them, cut off and discard the green tops and roots and slice the leek in half lengthways. Wash them well, and store them in a plastic bag in the vegetable crisper of your fridge.
