Rice syrup is glucose syrup made from rice starch, much as corn syrup is made from cornstarch. Although rice syrup could be refined and used interchangeably with other glucose syrups, it typically is not. Instead, the most common rice syrup sold in North America is brown rice syrup, which undergoes less refining so it can be marketed as a sweetener to the health food industry. Besides having a brown color and a distinct flavor, brown rice syrup is often sold as certified organic. Because brown rice syrup is less refined, it retains some of the vitamins and minerals from the rice.
