Lipids, either applied to grease the pan or added to a formula, help ensure that baked foods are easily removed from their pans. The emulsifier lecithin is extremely effective at this and is a major ingredient in most pan release sprays. Not surprisingly, low-fat baked goods tend to stick to pans and paper liners, so the use of pan release sprays is particularly important with these products.
