These are the flower buds of the caper bush which grows along the Mediterranean coast and in India. We buy them pickled to use in sauces and dressings. When old, they become soft and impossible to use. Check the bottle before buying. If the liquid is cloudy and the capers without shape, don’t buy them.

Washed capers are those that have been rinsed in clear cold water to remove their salty flavor. Put them into a small tea strainer and submerge them in ice water. Cold water also has a tendency to plump them. Blot on paper towels before using.
