Truffles

Expensive underground fungi. We use them as we do mushrooms, but not so frequently because of their cost. One 2-ounce can contains four or five truffles, depending upon their size. Use what is called for in the recipe, then freeze the remaining truffles in individual packages. Freeze what little juice there is with the truffles, or use it in the sauce you are making. Frozen truffles will keep indefinitely.
