Whenever possible, buy rice in bulk from one of the nationality stores that exist in our larger cities. Chinese, Japanese, Italian, Greek, and Indian grocers all carry many varieties and grades of rice. Experiment with the different types available. Almost all of them have better flavor, and are much less expensive, than the fancy converted rice on the supermarket shelves. If, however, you are using converted rice, washing is not necessary.
