Instead, when you’re turning out your cake, rip a little taste off the bottom, put it aside, let it cool for a few minutes, and then taste it. If it’s good, no one will ever know that you doubted it at some point. If it’s bad, throw it away, start again, and don’t beat yourself up. I’ve done it plenty of times.
