I tested these recipes with most of the popular milks on the market—almond, soy, coconut blend (NOT coconut milk from a can). And they all worked! Unless specified, use your fave milk in recipes that call for it. The only caution I have is that rice milk lacks fat and sometimes makes baked goods a little lighter.
