Also called witloof (and endive in Europe and USA). Tight, conical heads (called ‘chicons’) or bitter white leaves, forced in darkness to keep them pale, tipped with pale yellow. The best is imported from Belgium, the Netherlands and Italy, and is sold wrapped in purple tissue paper to protect it from the light.
Eaten raw as a salad ingredient or can be braised.
