Fronds of slender leaves with a fresh, mild lemony-aniseedy flavour. Good with spring vegetables (especially broad beans and cucumber), fish (especially salmon). Used as the curing agent to turn raw salmon into gravadlax. A favourite herb of northern and eastern Europe and Scandinavia. Do not confuse with seed.
