Large, floury, unsweet bananas, always eaten cooked. Staple to the Caribbean, South and Central America and Central Africa. Can be boiled in their skins for about 30 minutes; ripe ones, black-skinned, can also be peeled and fried in lengthways slices. Also good roasted or barbecued (slit the skin first).
