Taogé. Unless otherwise marked, beansprouts sold in Britain are usually the sprouts of mung (green gram) beans. They can easily be grown at home from seed; they are ready to eat after about four days. They consist mostly of water, but the texture is agreeable for salads and garnishes. If you have time and patience, break off the brown root of each sprout; this improves the appearance of the dish.
