Kaffir lime leaf; the leaf of Citrus hystrix. The peel and the juice of the fruit are used in cooking, but only the leaves are called for in recipes in this book. Fresh and dried leaves are sold in most Oriental shops. Bay leaves can be used as a substitute, but are stronger-tasting, so use one bay leaf instead of two or three kaffir lime leaves. Remove the leaves before serving the dish.
