Parkia speciosa. A rather bitter-tasting bean, obtainable in Thai shops; each bean is prominent inside the long ribbon-like pod. Beans packed in brine (peté asin) are sold by Conimex. Pods of young fresh peté are often topped and tailed, the stringy edges are trimmed off, and the whole bean is sliced thin and fried; or the beans are taken out and cooked after each has been skinned with a sharp knife.
