Musa paradisiaca; pisang. These are green or yellow, unripe or ripe. They are available in supermarkets and Indian shops. Green ones are sliced thin and fried to make plantain crisps. In this book, ripe plantains are specified as a substitute for pisang kepok, an Indonesian cooking banana used in cakes, etc.
