Pachynhizus erosus; P. angulatus (in Java, also besusu). This is a sweetish-tasting tuber, sometimes given the English name of Yam-bean. It originated in Central and South America, and its Indonesian name is probably derived from a Mexican dialect name. It is a quick and easy plant to grow. The tubers are apt to be somewhat starchy but they are perfectly good to eat. The leaves and seeds, on the other hand, are both poisonous in any quantity. The tubers are often used in making Rujak, where the strong piquant sauce brings out what flavour they have.
